Our King Soopers has started carrying a lot more organic produce, which is great! They’ve also started selling very ripe organic bananas at a reduced price, which just begs for banana bread!
I wanted to do muffins, since it’s the last week of school and Monkey might need something she can take on the go.
Here’s what I did:
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 cup rolled oats (not quick oats)
1/2 cup white sugar or Stevia to taste (About 1/4 cup should do it)
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil or applesauce
1/2 teaspoon vanilla extract
3-4 large ripe bananas, mashed
1 cup mini chocolate chips (optional)
Preheat oven to 400 degrees.
Combine all of the dry ingredients in a bowl and set aside.
In a mixer, beat together egg, milk, applesauce, vanilla and bananas.
Slowly add combined dry ingredients until blended. Â Stir in mini chocolate chips, if desired.
Use a large scoop to evenly scoop into sprayed two muffin tins, making 24 muffins. You may also use liners.
Bake at 400 degrees for 18-23 minutes.
These were so easy, and the kids loved them.

Yumm-O is all I have to say. Only change I made was I only used 2 bananas since that was what I had and I only used the 1/4 cup sugar. They came out great! Thanks!!
